Hi, I'm brand new to using any of this. Read some existing topics on Due Date. Trying to create a rule for due date. Saw some suggestions for a smart value but when I input the value it's been rejected. What am I doing wrong here?
You should be adding the rule to the 'Project Automation' tab found down the same left pane on the project administration page. The one that you are using is the old one and has got limited set of options available.
When you say "left pane" I believe that both versions of Jira have project administration on the left pane. I'll note that my Jira interface changed a couple days ago. I don't know if it downgraded or upgraded but I didn't change anything.

In the 'Project Settings' page, along with the option to access the workflows, permissions, notifications ..etc, you should be able to see an option to access 'Project automation' tab. It's somewhere down the list.
If still not found, please share a screenshot of the Project Settings page that is available for you.

When I view my settings it appears you are describing. Again, a few days ago my view was completely different. All my Jira tabs were in a large blue pane on the left hand side. Now all my tabs are on top. I didn't change anything though.

So it's a Next-gen project. For that, you will have to navigate as below.
Project settings > Apps > Project automation
