It never fails, I beat my head against the wall trying to figure something out then I give up and post the question. Then almost immediately I figure it out.
What I did was go to Site Administration >> Jira Service Desk >> Portal Only Customers.
This list all customers and their last session dates. I exported it and presto, I had what I needed.
