depending on what format you prefer for a demo you could choose Atlassian's official page for Jira Service Management (https://www.atlassian.com/software/jira/service-management) or check the short demo videos on Youtube - also introductions and discussions are provided there.

Like Jack mentioned, learning on a free Jira instance in the cloud is what helped my personally the most.

Last but not least there is great training material out there - however I understand that they might be suitable later in time, when your journey already started.
