When the client issuing a ticket via email form, can we limited the information provided to avoid i.e. email signature details etc.

Unfortunately, it is not possible to configure customized strip quotes on the incoming email handler of Jira Service desk application to filter any undesired information from the ticket.
We understand how this limitation can cause a big amount of irrelevant information to be added in your tickets when using the email channel, so we created the following feature requests to allow that kind of filtering:
As a service desk administration , require custom strip quote for requesting create issue from email
Remove e-mail signatures from incoming mail
Feel free to vote and watch the suggestions to increase the priority and also receive notifications about any updates.
As a possible workaround, you can use a third-party app that provides you with a customizable e-mail handler to properly configure your strip quotes, as Enterprise Mail Handler for Jira (JEMH).
