As per the details you provided, I understood that you would like to add an email of a domain you own as the notification email, please correct me if I'm wrong.
If that's the case, you need to verify a domain in order to change the notification email.

Once the domain is verified, you can change the project email by going to Project settings > Notifications (for classic projects) or Project settings > Notifications > Notification email (next-gen projects).
