Has anyone found a way to automatically create issues or tasks in Jira when sending an email to a specific address?
For example, let’s say I include a certain email in the “To” or “CC” field—can that trigger Jira to open a task?

If you use Jira and NOT Jira Service Mangement, you can configure a Jira Mail Handler.

The default for Jira would be the Jira mail handler, as Marc already mentioned.
