I would like Jira Service Desk to assign the organization to an issue based on the reporters association to an organization. Ex:
User: Javier Pérez
Organization: 1.0 - HQ.marketing (this is the part I would like to make automatic so we don't have to specify it ever single time on each issue)
Issue: Can't open outlook

Hi,
You can use your groups to manage that if you have them defined there. You could use JQL like "reporter in membersOf('organizationGroupName')" and then set the organization to that one.
And also you can define issues to be automatically shared with the customer's organization.
I know there is a prerequisite here but this is the best solution I have. Hope this helps.

The requierment tha you need, it`s already an native functionality in Jira Cloud since a time ago.
