I don't know of a problem specific to a day of the week like Sunday. However there are other possibilities, mostly that revolve around the timezone being different between your user account, and the timezone that the Jira server is running in.
For single dates in Jira, sometimes these are being stored in Jira's SQL database as complete date/time values. It happens that Jira tends to store these date values with a time value of 00:00:00 or midnight. The problem can then be that other user accounts in Jira, if they don't have the same timezone can possibly show that the time is 1 hour or more before that time. In turn, the date can appear to be 1 day before in some cases because to another user's account 15-March-2018 23:00:00 is the same time as 16-March-2018 00:00:00 is on the server.
So I would be interested to learn what timezone Jira server is running in?

One way to adjust for this is to set your timezone to be the same as Jira's timezone before you set this kind of date.
