I would like to prohibit my client users from modifying the email where they receive service desk notifications.

Can you please describe to us all the way you followed to get to this screen? JIRA has several versions, so I believe we are not using the same. :)
By the way, Service Desk Customers are not able to edit their e-mails on JIRA Portal unless they have an Atlassian Account to do it. In that case, you must claim your domain to restrict this kind of change, as you can see in the documentation below:

Unfortunately, there is no way to disable the customers profile editing.
Although, I just found the following feature request that might help you in the future:
