Can you create different types for child issues? if so, how? I am currently new & learning Jira so unsure if this is something i would need to get IT to carry out :) Thanks in advance
Where are you looking at child issues? There are different takes on this in Jira.
If you mean subTasks - it is possible to create different subTask issue types. See https://support.atlassian.com/jira-cloud-administration/docs/configure-sub-tasks/
This would be a Jira administrator function to set them up.
In Roadmaps, there is a hierarchy defined by issue parent/child relationships. I think you are able to configure this for your own roadmap configurations.
Also there are issue links - new ones need to be defined by the Jira Administrator.

You have tagged your post with "jira-service-management". Are you asking this question specifically in the context of a Service Management project?
Also, are you look at a Company Managed project or a Team Managed project? Configuring multiple Sub-task type issues is not currently available for Team Managed projects but is available for Company Managed projects.
