I have an interesting request, and I am surprised I am not see an answer.
When sending an email via automation based on triggers, the email is not documented in the issue.
How do either attach the mail (if possible) or add it to the comments of the issue?

You could add the Comment On Issue action to the Automation rule to add a comment when you send an email about the issue via Automation.
I'm not familiar with ways to attach to an issue emails generated in an Automation rule.
Yes, adding a comment helps but we must provide evidence of the email sent.

As trudy has mentioned, unfortunately there is no solution for this use case.
Best you can do is to recreate your email in the comment.
As far as "evidence" goes, your Jira Admin can provide Audit logs which can prove email was triggered and mail handler sent it or not.
