Does anyone know how I set my Projects to a Scrum template?

You don't.  The templates are only used when you create a project, same as you would with real-life templates (you use them to create something of a standard shape).  The template is irrelevant after you've used them.

But, projects are configurable after creation, and if you want your project that was not created with a Scrum template to be more like a Scrum templated project, change it.  Re-configure it with the workflow and fields you want and add a Scrum board to it.

Welcome to the community!

Actually, there is no way we can set the default template as a Scrum template for the project, but if you want to change the project type you can, it's under Project Administration -> Details -> Change project type
