Does anyone have an efficient method for finding HTML tags in field descriptions so that I can convert them to wiki markup? We have dozens and dozens of custom fields not to mention a few dozen field configurations so going through them one at a time is a bit laborious. Any ideas are appreciated.

Hi Michael,
while I am quite sure it won't address all aspects of your need - at least custom fields with their description can be gathered through REST API, maybe this at least lowers the load on todos you have to go through for finding out where HTML tags could be used.

On the contrary I was only able to find a Suggestion

as for the requirement to gather data about field configuration programmatically (f.e. via API).
As per some experience from previous scenarios the task was put on some (many) shoulders so different Jira-admins took a bunch of schemes in review (as well as documenting and cleaning up afterwards, of course).
Maybe there are some other ideas from out of Atlassian Community but to be honest it would be still the option I'd take in consideration if I had again the requirement (basically the same like yours at this very moment).
