Hi all,
Does anyone know the filter that would sit behind the "Epics in Progress" Insight? (ie the epics that the stories and tasks belong to in current sprint).
Note that this "Insight" is picking up the epics when the epic itself is NOT in progress.
We are on Premium Jira Cloud if that helps.

I'm afraid that it is not possible to display that in a dashboard by using Jira's native gadgets. The most you can do is a table like the one mentioned by @Lisa Forstberg, but that does not display percentages and it is based on statuses, not status categories.
An alternative would be to search on Atlassian Marketplace for an app that offers such functionality.
If you are willing to install an app, our Great Gadgets app has a Pivot Table & Pivot Chart gadget that can display % completion for the epics.
It can calculate epic progress by number of issues within the epic, or by sum of story points of the issues in the epic.
The result can be displayed as a table, heat-map table or chart of various types.

It looks really neat in Insights and I too would like to see this as a gadget a Dashboard, but its not there yet.
The closest I get is to use the two dimensional filter statistic gadget. Choose a filter in which you fetch all issues in the sprint like JQL SprintIN openSprints() plus add more conditions to suit your scope.
Then X axis Status and Y axis Parent/Epic Link
Its not as pretty, no progress bars or %, just numbers I'm afraid. Example:
