Basically, I want a new email to send whenever a staff member, or the customer sends a message, and it will be all in 1 thread.
All I need is a way to get all of the content in the last email sent, and a way to get the date similair to shown.

This looks like Zendesk to me - I believe Discord use Zendesk for their support interface. Jira Service Desk can do this out of the box though.
When a ticket is raised, by default an email will go to the requester:
If you navigate to 'project settings' in your Jira Service Desk project there is an option for 'Email Requests'. This will give you the default email address if you want to let your customers email their requests to you and manage them from JSD.
There is also an option on the 'project settings' sidebar for 'Customer notifications' where you can change the template messages.
