I have a situation where many users join to work on projects for a specific period of time (for example, a few people might join to work on something for 2 months). Is there an option to provide them with a license that only lasts for that period and automatically expires afterwards?

This feature is not available in Jira or other Atlassian products.
Workaround:
Create a new group (example: Temporary_access_group)
Grant Jira product access to this group.
Add/remove users as when required from this group.

It is not possible to provide a license that auto-removes itself after a certain amount of time. That will need to be a manual process, unless you have an identity provider and SAML configured.
