Is it possible to automate a custom field entry from an attached Word form?

I'm trying to auto-populate 2 custom fields from the body of an attached Word doc and/or from an email template.

We already have emails auto-generating tickets. The emails being sent contain either an attached Word doc (a standard and repeated template) or the request form is in the body of the email, again a standard template. The labeling of each field in the form is consistent.

The team would like to automate the population of 2 fields in the ticket, obtaining that data from the Word doc or email body.

Example: the request form, whether in Word or body of email, has a required field called "Allocate To". This is a global region, like Europe, N America, Asia. We'd like to auto-populate our ticket field called "Team" with the data in "Allocate To".

Can this be done in Jira Software or JSM?
