We use Jira Service Desk Server, hosted on our own server.

We'd love to be able to globally replace the use of the term "Issue", which can have a negative connotation, with the more generic "Request".

I assume it would fall under the officially "unsupported" banner, but regardless, is there any way to do this on the server version?

You can translate Jira to change words, but don't.

  1. A lot of your users have used Jira before, and will do again.  Having to explain to these people that "we use different words for things in this system" is work you don't need to impose, and you'll find it continues to confuse people well after the fact.
  2. Jira already uses the word "request" to mean, well, request.  And these are not the same thing as issues.  If you rename issue, you will want to rename request as well to avoid confusing them.
  3. For both of these terms, you're going to make the standard documentation immensely confusing
