I don't clearly understand the difference of
- project email request
- system incoming mail
Why are there more than one mail configuration?
I thought to configure just one mailbox (system) and connect all the projects within jira service desk.
How can I do that? Is it allowed?
Project email request in Service Desk will let you create requests and in system incoming mail you will be able to create only issue types. An issue, that was created from the system incoming mail, will not have a request type.

Yes, you need to create different email addresses. There is a request in JSD to make the project email request be able to see imap folders. If it were possible, you would be able to use a single email address. Incoming mail handlers can see imap folders.
