Thanks for this, do we loose any functionality in installing previous version, and installing it as an addon and not the full product?
If we install Service desk as a stand alone product on a separate server will be still be able to collaborate with our JIRA instance.

No, you can't do that.
I don't think you've quite understood what these systems are.
JIRA 6 is a single system, with an add-on called "Agile".
JIRA 7 is now distributed as 3 different systems, Core, Service Desk and Software, but in fact, they are actually JIRA Core, JIRA Core with Service Desk bundled and JIRA Core with Software bundled. Most important here is that JSD and Software are now applications rather than add-ons. But they are applications that run inside JIRA.
