I'm trying to use Automation for Jira to create sub-tasks and then to assign some of those sub-tasks to the assignee of the parent ticket but it doesn't seem to be working. I have the following:
I have tried "Copy Assignee from" Parent Issue, Current Issue, etc but nothing seems to work. After creation of the sub-task, the Assignee is listed as Unassigned. Any help would be appreciated.

yes, the other fields seem to get copied down properly from the parent. I'm creating the parent and the sub-tasks all in the same rule.

Here's a few more screenshots, the Audit log shows the sub-tasks being created and the rule that is selected is the particular rule in question that I'm working with now.

It appears to me that the Assignee is not getting set in the initial issue that is created - in this case ISD-333. So there is no Assignee to be available to get copied down to the Sub-tasks.
Is there more information available for the warning/error on the Assigned issue to user comment?

I'm not seeing any warnings or errors. I do have the "Assign the issue to " rule and it looks like it's being assigned in ISD-333

Was curious about this part:
It doesn't show the value for the Assigned user with a check mark. So I am curious if the system doesn't have it available at the time it is trying to copy it down. It's suspect that it does not show success like the others.

That appears to be the problem to me.
The other option is to not try to copy down the value when you create the card, but actually do an Edit Issue function right after creating the Sub-task and update (Edit) the assignee field at that point.

Any other ideas on this? I'm unsure how I would edit the assignee field of the sub-task created immediately after it has been created.
Also, if I try to link that sub-task as a child to the trigger ticket, I get the following:
Unknown fields set during create, they may be unavailable for the project/type. Check your custom field configuration. Fields ignored -Linked Issues (issuelinks)
However, if I go into that sub-task after the fact and link that parent manually it works fine.
This feels like a bug to me.

Right after the create of the sub-task, put in a component for Branch rule / related issues.
Then choose Sub-tasks or Most recently created issue
Then add a component for Edit issue to update the Assignee field. Copy it from the parent.
