How do I give my customers a url where they can see all the open and closed tickets that they've raised with the service desk?

You can give your customers a direct link to view their requests. Just take your customer portal URL and add /user/requests to the end.
Example: If your portal URL is https://yourcompany.atlassian.net/servicedesk/customer/portal/1, the full URL would be: https://yourcompany.atlassian.net/servicedesk/customer/portal/1/user/requests
