Hello, I would like to be able to configure the visibility of internal notes to certain people in Jira.
Our clients have the 'Service Desk Team' role and I would like to keep it that way. How do I configure Jira so that only my colleagues see the internal notes and not the customers?

By default, internal notes are only visible to users with access to your service project. Is there a reason why your clients need to have the "Service Desk" team role? Do they have a JSM license? You could save money by just designating them as customers.
Unfortunately internal notes cannot be further restricted to different groups or project roles at this time. There is an issue you can vote on to implement this feature.
Unfortunately Atlassian "solved" the issue not by providing new general options but by adding a per-comment visibility setting.
