So I used to go in 'all issues' and select advanced search in order to unlock additional search parameters.
The button is missing, and when attempting to use the new search Jira told me it was still building modules, but all I had to do was switch to the old search.
So I clicked that and ended up in the old basic search.
Whenever I try to filter on something advanced it will say
"To search by xxx please switch to advanced mode".
However there is no longer anywhere I can switch to advanced mode.
the tab I would usually click in the top right corner is gone, and while I do know a bit of JQL its not strong enough for me to just write it all..
Can someone help me understand if I'm overseeing it?

Welcome to the Atlassian community.
Atlassian recently changed the name of the "Advanced Search" option. Under the Filters menu you should see that it is now called "View all issues". From the "All Issues" option (available from the navigation panel on the left when viewing a board) the button to go to that same screen is now labeled "Go to all issues".
If "Advanced issue search" (or any other feature) is no longer there, you guys should remove/modify misleading instructional docs about it. Like:

A lot of times I notice that Atlassian (although releasing software that suppose to help to stay organized and save time), is terrible themselves at maintaining their own inaccurate documentation. Somehow I find proper info on people forums after wasting hours. I recall countless occurrences such as this.

I am not totally confident on where you got stuck. But just wanted to confirm won't you see the Advanced Search option by typing the following keys one after another?
Press the forward slash key '/' and then the Enter key
You should be seeing the advanced search section with the jql address bar. If you are seeing the basic view, maybe next to address bar you will find Switch to JQL option.
