I have 3x different service requests that I need to setup in the Customer portal. From what I see this means I have to setup 3x different service desk projects.
I would like all new requests to show in one simple board in the backend of Jira. Is this possible to have all 3 projects requests come through on one board?
If it is not possible, is there another way to achieve the same idea?

If you have Jira Software, you could create a Kanban board, which would select issues from multiple projects. Then you could use the board to work with these issues.

You should create a filter, which would choose required issues from the 3 projects. Then you create a new Kanban board from this filter. That would do the job.

A Jira Service Desk project embeds a customer portal in which customers can raise requests. You can create several request types in one customer portal. This screenshot shows it well:
This is a customer portal containing several request types: Request new laptop, Get IT help, etc.
You can then retrieve all created requests through your project queues:

Thanks for your response@Manon Soubies-Camy. We already have setup the customer portal and use it on a daily basis. At the moment each project is listed in the customer portal, this what I want. But in the backend I want all these projects to lead to one simple kanban board. Are you aware if this is possible?

If you have Jira Software installed, you can absolutely do this! I agree with @Alexey Matveev above answer :)
