I have 2 projects with the same fields in each project. I want to map subtask from project A to project B and have all the values map from one to the other. When I use the Action then Move tool, I select the 'retain' checkbox on the side. NOTHING RETAINS! How do I map my one custom field value from Project A to the same named custom field (and keep the value) to Project B?

What types of project are you using for the source/destination: company-managed projects (CMP), team-managed projects (TMP), or one of each?
If either of the project types is TMP, this could explain what you are observing as custom fields in those projects are unique by project; they cannot map to others...yet.
There is an improvement in-progress to share custom fields for TMP, and you may watch/vote for it to see progress and release information: https://jira.atlassian.com/browse/JSWCLOUD-20905
