I'm considering Jira Server Desk installation in Server mode. If and when it becomes a critical system, it makes sense to convert it to a Data Center installation.
Is this doable?

Very much so. The recommended route for converting from Server to Data Centre is broadly "reconfigure hardware to support DC if necessary, reconfigure some of the Jira Service settings if necessary, flip the flag from Server to DC, and you have your first DC node"
That is quite over-simplified, but note that it does not include a new installation or migration. You're converting, not moving.
