I need to make custom priorities for each project in Jira, well mostly i need to change them in one project that needs 5 priorities instead of the standard 4, but i need it to not reflect the whole account, just the one project ...
can this be done ?

Can you please explain a bit clear.
If the project with shared "Priority Scheme", if a change has been implemented on the permissions. it will impact the other projects.
Please make a copy of the "Priority Scheme" which applied on the current project. and apply changes on this copied "Priority Scheme", and associate with the required project.

I have a project that need to have 5 priorities instead of 4, but when i try to change it, all my projects have 5 not 4 :D
So i need a way to have this one project have its priorites :)
