If i would like to upgrade to this new JIRA to use the Roadmap Feature but currently using the standard version what would i have to do to migrate my org and also try and keep its current structure?
In addition can i make this change for only one project as my org has different teams with different projects which may not want to use the Roadmap feature

No, there's no switch. Next-gen is a different structure, not a minor config change.
All you can do is create a new Next-gen project and move all your issues into it, with the data-loss that implies.

You would have to migrate from Server to Cloud to get Net-gen and roadmaps.
You might not be able to retain some of your structure, depending on how customised it is and if you've used any Apps to do it.
