I'm configuring a project that handles all system related questions and all is fine except the export can't export any kind of resolved date and or time stamps. right now, I'm trying to do a workaround using the status history entries but it's the long way around...
anyone have any idea how to get JIRA to create these stamps?
I’m not sure I understand. when I export a list of resolved issues I have a resolved column with the date. Are you saying that you cannot get the resolution date in your exports?

Then my guess would be that you are not setting the resolution field when you are setting issues to a done status.

Normally, you should be able to retrieve the "Resolution Date" field which corresponds to the date when the resolution was set in your issue. If no resolution is set, then you should add a post-function setting the resolution in your Workflow.
You could also create an automation rule which copies the current date in a dedicated field during the desired transition of your workflow.

Do you have an example of using the post-function setting? and or the automation rule. I'm unsure as to what function to use in the different functions

Yes, it's the "Update issue field" post function, where you select the "resolution" field and set it a value.
Then your resolution date should be set when you transition to the status. Here is an exemple of my transition to the "Done" status :

Then indeed you can't set up resolutions in these projects, you can upvote the following demand to Atlassian regarding this mater : https://jira.atlassian.com/browse/JSDCLOUD-8523
Then I guess you could still go for the Automation option, or switch to a classic project which might require too much work to be worth it
