That's a convoluted and horrid thing to do to your users, but you can do it.
Set up an issue security scheme that has at least one level that says "you can only see this issue if you are in role X". Then edit the workflow, changing the transitions. Ones that go into a status that anyone can see should clear the security level field, and ones going into hidden status should set the level.
The other way to do it might be limiting "browse" permission by using workflow properties on the status, but I have not tried that, and suspect it might not work as desired.

Isn't possible to configure the visibility of the issue depending on the status.
What you can make is configure your workflow to change the security level based on the transition it makes.
