updated our workflow and not seeing it on scrum board

It never lasted for me for more than a couple of seconds. Are you sure that you published the updated workflow? When you update a workflow you update a draft of the workflow. You need to publish it if you want to apply the changes.
Also after publishing your workflow, you should map new statuses to the columns on the board or add new columns
