I have a question. Is it possible to see who is editing the ticket on the right side when submitting a ticket?

Adding more fields in the right panel of the request is currently only possible using a third-party app. You can have a look at our app: Advanced Portal Reports.
It will allow you to show any Jira field on the Customer view in the portal (incl. Assignee, Priority, any custom field, etc.).
It also provides your customers on the portal with a table report where they can see, search, filter and export all their JSM tickets, including many additional details (incl. SLAs, custom fields, etc.), with a very simple UI.

yes I mean whoever is editing the current ticket that the person who submitted a ticket can see in the right column

Natively is not possible to show the assignee in the portal request list. There is a request for implementation that you can vote: https://jira.atlassian.com/browse/JSDCLOUD-328
As a workaround, you can use the marketplace apps from Devinity (Extension for Jira Service Management): https://deviniti.com/support/addon/cloud/extension/latest/display-additional-details/
