Why does my JIRA project use another project's Epics, and how can I have Epics per project?

I have a cloud installation. We use separate projects for separate purposes in the business, and it makes no sense to use another project's Epics in other projects.

Is there a way I can configure the project so that it has its own Epics?

Hello,

Epics can be set from different projects. You can not change it.

This does not answer my questions "Why?" and "How?".

I'd be happy to receive some guidance more.
