my company should manage tickets by jira, the most suitable Jira's project type is the "external service desk" because we need to open ticket directly by the customer mail. I'd like to manage tickets using boards (like scrum project)... could anyone tell me if it is possible?

You also have JIRA Software, you can get Kanban board functionality and apply it to JIRA Service Desk projects.
