I wan to use a customfield in a canned response .
Is this possible? It seems that only a few variables are available.

It is not possible in built-in Jira canned responses to include custom fields (as variables/macros).
Nevertheless, it is perfectly possible with Canned Responses Pro Templates for Jira app.
Please see the attached clip where I create a template with custom field macro and demonstrate how to use it.

So what is it about the field that you want to use - the value in the field? And where do you want it to show? What do you mean by "response"?
