If I use jira to manage sales cases, how can I display sales by service in a report?

I have created a number of assignments with custom fields, is there a page or something that details how to show the sum of those values in a report?

The problem you are describing is not specific to the CRM use case. If you look at this on an abstract level, then the question can be rephrased as "how to sum custom fields in Jira"?

A few ideas:

1. Use a reporting app: https://marketplace.atlassian.com/search?category=Reports&hosting=cloud&product=jira
   1. There are many of these, from complex-and-flexible ones to simple-but-less-flexible ones.
2. Or, you could even try an app that is developed specifically for the CRM use case: https://marketplace.atlassian.com/search?hosting=cloud&product=jira&query=crm
   1. These could give you a lot more features that will be useful along your journey.
