As an administrator I do not want users to be able to use the option in their profile which shares their filters by default with all logged in users.
Use of this option means that any external clients in the Jira instance can see the names of filters etc which may well be completely irrelevant to them or even business-confidential.
I have disabled the options to add shares of filters, boards and dashboards via e.g. filter permissions such that they cannot simply share with e.g. 'all logged in users', 'anyone' or the group that means 'all logged in users' (jira-users). But the fact that admins want to be able to disable this option means that equally they are likely (like myself) not to want users to be able to 'share with logged in users by default' either.
Is there any method of doing this? Either an option in the software (we're using Jira Server version 7.5.2 currently) or by e.g. adding further code into the announcement banner?
I'm not exactly following what you want to do, but I think you can solve the problem by changing your Global Permissions. The "Create Shared Objects" permission is what controls the sharing of Filters. If you only grant that to people that should have it, I think it will do what you want.
