Welcome to the Atlassian Community!

So the main question to get started is "migrate what?".  Whatever you do, you are going to need to design and build your service desk functionality in Jira Service Management, but the other part is what data you want to migrate?

The easiest thing to do is start clean.  Move to your new Service Desk, stop people creating new requests in the old one, and get your agents to work through and close all the open items in your old service desk.

If you want to carry things over, then you're going to need to decide what data you want to take, how to export it, then how to re-work the export into a shape that you can import into Jira (generally, this will work out to "we want open issues, we'll import them from a CSV file, one issue per line)
