We want to use this plugin to easily communicate with external reporters who have no access to our Jira, and we don't want them to see the personal name of the sender (the e-mail should ideally say it is from "xyz support team" or whatever we decide to configure it to).

This is not possible at the moment. JETI follows the rules of JIRA to build the name (not email!) of the sender. It uses the pattern that is set in JIRA Administration \ General Configuration.
However, I think your request is reasonable. Therefore I entered a feature request here: https://metainf.atlassian.net/browse/JETI-93 you can watch this issue to get updates.
