When I go to add a custom field in the "admin section", I'm assuming it's under Jira Settings>Issues>Custom Fields, however do not see an option in the complete list to enter an Insight Custom field of any sort be it single or multiple entry. None are displayed. Does this mean Insight isn't totally integrated with Service Desk?

The custom field on the cloud solution is called an asset type field. In order to configure one please refer to our documentation labeled
Integrating Insight with Jira.
