Is there DEMO Account with built in Projects and issues

So I am doing an online course on UDEMY on JIRA its a short course, the course is very detailed, unfortunately, I don't have anything to practice on or follow the examples on the video, I have to recreate them myself on a free account.

No, Atlassian use a "trial" model instead.  You're free to download and install Jira and give it a trial licence to try out for 30 days on Server or 7 days on Cloud.

You can create a project with sample data.  Go to Projects > Create Projects and look for the 'Create sample data' option at the bottom of the create project model.

Clicking on this will update the create project module to display as below:
