I would like to add an option to the approval flow:
1st - Approve (Change status to Performing Area)
2nd - Disapprove (Changes status to Closed)
3rd - Send to Committee. (Change Status to GMUD)
in the standard process of approving and rejecting I am already able to do it.

Welcome to the community. Here are a few things that you can do -
1) Modify your existing WF to ensure transitions are established to your desired statuses (i.e. move to Performing Area, Closed, and GMUD) from your from statuses. NOTE - If your current WF is shared with other projects, then you will need to make a copy of the existing WF first and then apply the customizations. So, your changes will only affect the specific project.
2) Once the WF is customized, then you can use Automation for Jira to establish automation rule to conduct the necessary WF transitions automatically. Please refer to the following links on Automation of Jira -

By Default we have Decline and Reject, how to create a third option?

Are Decline and Reject already a WF status? If so, you just need to create a new WF status for your third option. I am not quite understand what you meant by options?
