I currently have the IT helpdesk setup with "Assist / Halp" and tickets go back to our Jira Service management for tickets.
I need to have a new team brought on to deal with technical issues for some specific software (that isn't being managed by the current IT team).

You can leave them in one project, and hide/show issues to dufferent teams with issue security permissions.
You can set issue security (it's special custom field) for issues with Jira Automation.
