Welcome to the community. Do you have any logging or audit logging showing the requested participants were removed by Atlassian Assist? (i.e. access the request in question via the project UI and access the Activities section of the issue view where you can see all the fields changes - before and after values)
I would also recommend that you may want to reach out to Atlassian Support (https://support.atlassian.com) for further assistance since they will be able to access the system logs on the backend to further investigate.

Yes, the removal of the participant is logged as activity by Atlassian Assist. We are also investigating some circular logic as a culprit.
