I need to automate the assignment of issues based on the language the customer chose in the portal, not on request type.
Is that even possible? Did anyone ever try?

I think the only way this will work is through a scriptrunner script.
Out of the box automation rules do not have any capability to check the users language as far as i know.
You can however add a language custom field to your request and use an automation rule on that custom field.
Less scripting but it requires your users to select a language for each request, kind of a hassle i think.
