Can I create Select List (custom field) up to 3 drop downs?

Can I create Select List (custom field) up to 3 drop downs? 
Currently, Cascading select list can only accommodate 2 dropdowns. can I make it up to 3 or more? (ex. Parent -> Child -> GrandChild)

No this is not possible.

The referenced Atlassian issue above has been open for 18 years!!!, so don't expect to much.

I would suggest to use the free app custom field suite from Caelor
