We need to confirm whether we can configure "N" number of customers in my jira service desk customer portal. Assume that I have unique email ids of all those "N" customers. Is that each customer can log tickets and their tickets should not be visible to each other? Kindly confirm me the same.

their tickets should not be visible to each other, only way your customers can see each other tickets is if they are part of the same organization.
Also, your request participants can see the issue.
