One of the doubts I have on the part of a client is that if they themselves want to extract their information to work on it in other repositories, does JSM allow you?

Out of the box, it is not possible. As there is an outstanding enhancement ask (old ask) on Atlassian side - https://jira.atlassian.com/browse/JSDCLOUD-826. You can add yourself as a watcher to the case to receive updates.
However, at this time, you will need a third party add-on to give you that functionality. You can take a look at https://marketplace.atlassian.com/
There is one add-on that I believe it has that functionality -
