I am testing the new feature "entitlement" where I see that I can create sub-categories such as level support, versions, contract date...
I am interesting in building a dashboard with those. Are they actual fields that I can display on my dashboard or use for filtering purpose?

Not sure on the dashboards but you can use the entitlements/product information (and the Customer Service information) like any other field for filtering.
On this page (https://support.atlassian.com/jira-service-management-cloud/docs/create-queues-based-on-customer-details/) you can find how they are used in queues so that should help you define your filter JQL's
The syntax is a bit different whether you have defined the info on the Customer or the Organization

I am already using the fild as your recommended but I created multiple entitlement details and I wanted to visualize those. Today, only the product name is displayed. If someone has a solution I would love to know it!
